Harvest: After the maturity of the grapes, we wait until grapes are deshydrated and get a high concentration of sugar.
Then, grapes are picked by hand and pressed.
Wine making process: After fermentation, this wine is kept on lees for one year before we bottle it into 50cl bottles.
Bottles are then aged for two years so the wine has time to get more balanced and bodied.
Terroir: schistuous soil, south exposure
Vine age: 40 years old
Food pairing: Perfectly pairs with foie gras, blue cheese or desserts with chocolate, citrus fruits and dried fruits.
