« Hello, I am Eole, master and ruler of the winds. I always keep an eye on weathercocks so I can predict if the air our vines breath is a wet wind coming from the Atlantic coast, a dry and hot wind from the south or frozen from north-east.
Regarding wines, I prefere rosé. A wine to be drunk fresh, on an outdoor terrace with appertizers or seafood. »

Appellation: Vin de Pays du Val de Loire

 

Varietal: 100% Cabernet Sauvignon

 

Harvest: Harvest in late September when grapes get a good maturity

 

Wine making process: Grapes are macerated few hours to obtain a nice rosé color. The fermentation last 15 days around.

 

Terroir: Those vines are well situated on a sunny micaschist plateau protected from spring frost.

 

Vine age: 15 years old

 

Food pairing: Perfect at the aperitif on its own, it is great with barbecue and also fruits salad.

 

Temperature of service: 10-12°C
